In the mood for burgers!

Garlicky grass fed burger, spicy cabbage slaw, sweet potato hash and a dang ol avocado man..... So I tend to just kind of throw things together at home based on three things: what’s in the fridge, what we have leftover in the Pete’s Paleo kitchen and what I can get done quickly. But once a week or so, Sarah will get a craving for certain dishes that I'm known to make. The other day it was my spicy Asian slaw and I was in the mood for burgers - and there is always room for sweet potatoes! So without further ado… Serves 4 -Slaw 1 head napa cabbage sliced 1 jalapeno seeded and chopped (you can leave the seeds in if you like it really spicy) ¼ cup scallions sliced ¼ cup cilantro chopped 1 T Red Boat fish sauce 1 T cider vinegar 1 T toasted sesame oil ½ T each salt and black pepper Mix all ingredients together in a bowl and let sit in fridge for about 30 minutes before serving. -Sweet Potato Hash 2 large sweet potatoes peeled and chopped into medium dice (1/2”x1/2”x1/2”) 1 red bell pepper sliced 1 yellow onion sliced salt and pepper to taste 2 T coconut or avocado oil Cast iron is the way to go with this dish. If you don’t have one, they are $20 in a kitchen supply store and will last for generations. Get one. Now. Get oil going in pan on medium heat, then add onions and bell peppers, sauté till soft, about 6 minutes. Add sweet potatoes next and begin to brown. It will take about 10-12 minutes for the potatoes to finish cooking through, leave on low until you are going to serve. -Burgers 1 ½ # Grass fed ground beef 3 cloves garlic smashed and minced ½ T salt and ½ T black pepper 1 T avocado, coconut or olive oil Form all ingredients together into 4 equal size patties and one 1 oz test patty. Cook the test guy off and make sure it’s seasoned properly, this is how we know the couple hundred we’re about to cook off tasted good. ;) Grill or cook in cast iron for 4 minutes a side or more if you like it past medium rare. -Avocado Slice the avocado Put sweet potato hash down, then burger and top with slaw and avocado. If we’re feeling really hungry, we add a fried egg on there too!
